Eggplant and Rigatoni


recipe

Ingredients

2 Large Eggplants washed
2 Onions
Olive Oil
1 -2 Garlic Cloves, chopped
12 ounces cleaned Mushrooms
2 cans of Drained White Beans
1-2 Jars Chunky Marinara Sauce
Package of Barilla Plus Rigatoni

Directions

Chop Eggplant into 1 inch cubes
Place eggplant in a large non-stick frying pan.
Cook on medium slowly till a slight brown or char is achieved on the eggplant and it is soft.

Remove the Eggplant, and place to the side.

Saute the onion and mushroom with a drizzle of olive oil till soft.

Add the Eggplant back to the pan, add minced garlic and Marinara sauce.

Cook Barilla Plus Rigatoni per package instructions.

Add the Beans to the Eggplant, heat till warmed through.

Serve on the Rigatoni

Top with a sprinkle of good Parmesan cheese.

Winnie’s Fresh Kale Salad

Ingredients

1 bunch of Kale rinsed and dried. Mince leaves and tender stems into small pieces.
1 Red Pepper diced into small pieces
1 Green Pepper diced into small pieces
1 can Black Eyed Peas drained
Raspberry Vinaigrette, or Vinaigrette of choice. Look for canola or olive oil.
Orange juice or lemon juice
Black Pepper
3-5 Chopped green onions, white part

Directions

Place in a glass bowl
Kale
Red and Green Pepper
Black Eyed Peas
1/3-1/2 cup Vinaigrette
2 Tablespoons of orange juice or a good squeeze of fresh lemon juice.

Cover with plastic and place in refrigerator overnight.
Prior to serving add green onion.
Pepper to taste.

Swiss Chard and Chicken Sausage

Ingredients

1 tablespoon olive oil
Large bunch of cleaned and chopped swiss chard
1 large onion sliced
12 ounces of sliced mushrooms
4-6 small fingerling or redskin potatotes
2-4 medium size Chicken and Maple Flavor Sausages
1-2 cloves of garlic, minced
Low Fat/Sodium Chicken or vegetable stock
Nutmeg, Black pepper

Directions

Set a large non-stick skillet on medium heat.

Add the olive oil, mushrooms, potatoes, sausage, and garlic.
Saute until the potatoes are tender and slightly browned.

Add the swiss chard and broth and cover. Cook until just tender to prevent it from becoming bitter.

Before serving flavor with the black pepper and nutmeg.

Option: In place of the sausage and potatoes add a 14 ounce can of drained white beans.

Pea Salad

Ingredients

1 Package of Frozen Petite Peas, defrosted and drained in a colander.
1 small container of 0% fat free Greek yogurt
1-2 tablespoons of Italian salad dressing
Small bunch of green onions, chopped
1/2 cup of smoked almonds, chopped.
Fresh mint, optional

Directions

In a bowl blend the dressing and yogurt and then mix in the peas, onions, and half of the chopped almonds.


Place in a serving dish, cover.

Refrigerate and allow to sit for a few hours.

Before serving top with the remaining almonds and a little chopped mint if you would like.

Asain Patty Pan Salad

Ingredients

2 small-medium patty pan squash sliced with skin on.
2 small cucumbers sliced
1/2 jalapeno diced
1/3 cup cilantro chopped
3 mint leaves chopped
1 large carrot shredded
4-5 green onions chopped
1/2 cup rice wine vinegar
2 tablespoons sugar
3-5 drops of Asian fish sauce

Directions

Place all of the ingrediants in a glass bowl and stir.
Cover and place in the refrigerator.
Stir once or twice while chilling.
Chill for 1-2 hours.

Serve

Sausage and Bean Ragout

Ingredients:
4-5 medium Zucchini, spiralized with the small blade.
Jar chunky marinara sauce
2 tablespoons ground Flax seeds.
1 14oz can cannellini or white beans, drained
12 oz sausage (Soy or lean turkey)
1 small onion chopped
½ cup chopped green pepper
1-2 garlic cloves minced
Black Pepper
Oregano
Parsley

Steps:
1. Place the Zucchini in a bowl of boiling water for a minute or two, drain and set aside.

2. While the pasta is cooking brown the “sausage” in a non-stick skillet with
flax seeds, green pepper, onion.

3.Add the marinara sauce, garlic, and oregano to the “Sausage”

4. Add beans. Cook in med-low for 10 minutes.

5. Serve on top of a large bowl of Zoodles

Preparation and cooking time total 30 minutes, serves 4 to 6 ( Freeze into individual portions to pull out and heat up for quick meal )
